Stanley Tucci’s Tomato Salad (Rocky Mountain Olive Oil Style)

Adapted from Stanley Tucci’s Tomato Salad Recipe in “My Life Through Food”. This incredibly simple, delightfully light dish makes an excellent side for grilled chicken or seafood.
Serves 4
INGREDIENTS:
· 8 small tomatoes
· 2 Tablespoons Rocky Mountain Olive Oil Garlic Infused Olive Oil
· Small handful basil leaves
· ½ teaspoon Rocky Mountain Olive Oil Sherry Reserva Wine Vinegar
· Coarse salt, to taste
DIRECTIONS:
Wash and cut the tomatoes and basil. Cut the tomatoes into quarters, tear the basil leaves into small pieces.
Place the cut tomatoes in a bowl. Add in the olive oil, basil and vinegar and toss to coat the tomatoes.
A few minutes before serving, salt the dish and enjoy.
