- 3 Tablespoons Rocky Mountain Olive Oil Black Mission Fig Dark Balsamic Vinegar
- 1 teaspoon sugar-free Dijon mustard
- 2 Tablespoons sour cream (or your favorite vegan alternative)
- 3 Tablespoons Rocky Mountain Olive Oil Extra Virgin Olive Oil (we suggest your favorite medium or robust variety)
- Salt and Pepper to taste
In a medium bowl, add in the Fig Balsamic, Dijon mustard and sour cream. Whisk until combine. Then, while whisking the dressing, slowly stream in the Extra Virgin Olive Oil and continue whisking until the mixture is completely combined and emulsified. Add in salt and pepper to taste and use on any salad greens you like, or even drizzled over pasta for a super simple pasta salad.
