Sweet Heat Grilled Chicken with Chipotle Olive Oil & Peach Balsamic

4 chicken breasts
1/2 cup Peach balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1/2 teaspoon salt
1⁄8 teaspoon ground black pepper
2 cloves of garlic, minced
1 tablespoon fresh thyme
1/2 cup Chipotle olive oil

Combine balsamic vinegar, mustard, honey, salt, pepper, garlic, and thyme. Whisk until well blended. Stream in olive oil and continue to whisk.In a glass baking dish, pour marinade over chicken breasts. Allow to marinate for at least 2 hours. Preheat an outdoor grill to medium-high heat. Cook on the prepared grill 7 to 10 minutes per side, or until no longer pink and juices run clear.
