Baked Barbecue Tofu

This is one of my go to recipes for yummy protein to add to my meals! I'll make the tofu ahead of time and toss it on top of salads or rice & veggies during the week. Even my meat-loving, tofu-hating brother will eat these yummy tofu bites!

YIELDS: 4

PREP TIME: 1 hr 30 mins

COOK TIME: 40 mins

TOTAL TIME: 2 hrs 10 mins

Ingredients:

1 14 oz. package of extra-firm tofu

1/2 cup of Horsetooth Hot Sauce BBQ Sauce (We carry both Hot Mess and Aloha Mr. Hand in our store)

Cooking Spray

Directions:

Press tofu for 30 mins (very important step!), learn more about pressing tofu at ohmyveggies.com

Cut tofu into 1/2 inch thick slices, then quarter each slice. Pour barbecue sauce into an 8" square baking dish (or zipbloc bag). Place tofu in dish and toss gently to coat. Let the tofu marinate in sauce for at least 1 hour, turning occasionally.

Preheat the oven to 400 degrees. Spray baking sheet with cooking spray. Place tofu on baking sheet and bake for 20 mins. After 20 mins, turn tofu over and brush with additional barbecue sauce. Bake 20 mins more or until tofu is brown on edges. Toss tofu in remaining barbecue sauce and enjoy.
