Balsamic Shrubs and Sodas

Ever heard of a balsamic shrub? This colonial-era concoction has come back into fashion as a healthy alternative to drinking soda. Made by combining water, vinegar, and fruit, these scrumptious drinks are easy to make and can be altered to fit every occasion. You can even substitute in sparkling water to make a refreshing balsamic soda!

The recipes below are some of our favorites, but have fun trying out different combos of fruit and balsamics - the possibilities for shrubs are endless!

Classic Strawberry Balsamic Sparkling Soda:

  • 1 - 2 teaspoons Strawberry Balsamic (or more to taste)
  • 2 - 3 fresh strawberries, coarsely chopped
  • 8 oz sparkling water (or regular water, if desired)
  • Fresh basil or rosemary spring for garnish (if desired)

In a tall glass, add balsamic and strawberries and muddle together slightly. Add in water and then stir gently until fully mixed. Add ice, and garnish if desired. Serve immediately and enjoy!

Apple-icious  Sparkling Soda:

  • 1- 2 teaspoons Gravenstein apple white balsamic (can easily be switched with any other white balsamic)
  • 8 oz sparkling water

Fill a tall glass with ice. Add balsamic and soda, stir gently to mix and serve immediately. 

Peach Party:

  • 1- 2 teaspoons Peach White Balsamic
  • 1/2 teaspoon coconut balsamic (or more to taste)
  • 8 oz sparkling water
  • A few fresh slices of peach

Add balsamics and soda to a glass and, stir gently to mix. Add in all but one of the peach slices and stir again. Garnish the glass with your peach slice and enjoy. 

Blueberry Lemon-Thyme Balsamic Shrub:

  • 1 - 2 teaspoons Lemon Balsamic (or more to taste)
  • 1/2 teaspoon Blueberry Balsamic
  • 1 handful of fresh blueberries, crushed
  • Sprig of fresh thyme (optional)
  • 8 oz sparkling water (or regular water, if desired), chilled

In a tall glass, add balsamics, blueberries and thyme (if desired). Stir. Add in water and mix until fully combined.

Kiwi - Mango Sparkling Shrub:

  • 1 - 2 teaspoons Mango White Balsamic (or more to taste)
  • 4-6 pieces of thin sliced, kiwi fruit
  • 8 oz sparkling water (or regular water, if desired)

In a tall glass, add balsamic and kiwi and muddle together slightly. Add in water and then stir gently until fully mixed. 

Other Variations:

Healthy Soda Alternatives: 

Instead of soda, add any of your favorite fruity white balsamics to sparkling water. You'll get a fizzy, sweet drink that satisfies your taste buds without all of the unhealthy added sugars and sweeteners. 

Some of our favorite balsamics to add include: Coconut, Comice Pear, Cranberry Pear, Cascade Raspberry, Mango, Pineapple, and Pomegranate-Quince. 

Spiked Shrubs:

Add 2 ounces of vodka or other liquor to the above recipes, along with ice for refreshing cocktails!
